White Pizza (Pizza Bianca)

A Brick-oven-style crust, fresh ricotta, broccoli, and chicken are the white pizza toppings of choice for this Italian classic. Section your dough into mini personal pizzas so everyone in the family can customize their perfect white pizza!

Equipment

  • 1 pizza stone (preheated)
  • 1 Pizza Peel

Ingredients
  

For the dough:

  • 3 1/2 cups organic, unbleached all-purpose flour
  • 2 tsp pink Himalayan or kosher salt
  • 1 tsp organic can sugar
  • 1 packet active dry yeast
  • 1 1/3 cup warm water about 110 degrees F
  • 2 tbsp extra virgin olive oil

For the toppings (use as many or few of these as you would like)

  • 2 tbsp extra virgin olive oil
  • 2 cloves garlic, minced
  • 1/8 cup red onions, sliced
  • 1/2 cup chicken, sliced into strips
  • 3/4 cup fresh ricotta cheese, whole milk variety
  • 1/2 cup fresh mushrooms, sliced
  • 1/2 cup spinach (fresh or frozen)
  • 1/2 cup broccoli florets (fresh or frozen)
  • 1/4 cup Romano cheese, freshly grated

Instructions
 

For the pizza dough:

  • Add contents of yeast packet to warm water and stir to combine. Allow to sit for about 5 minutes until bubbles/foam start to form on the surface.
  • Using a dough hook attachment, combine flour, salt, sugar, and olive oil in bowl of stand mixer (or any bowl if mixing by hand).
  • Add warm water/yeast mixture to bowl and mix on medium speed (or by hand) until combined.
  • Reduce speed to low and allow to knead for 8 minutes. If mixing by hand, knead for about 10 minutes.
  • Cut dough in desired amount of sections (2 medium pies or 4 mini) and form into a tight ball.
  • Place each individual dough ball in an oiled bowl, cover with a kitchen tea towel or beeswax wrap, and place in a warm spot. Allow to rise for about an hour and a half or until dough has doubled in size.
  • Preheat oven to 475 degrees F with a pizza stone in the oven (at least 20 minutes).
  • Roll out each dough ball into desired shape on a floured pizza peel. Carefully transfer to preheated pizza stone and pre-bale crust without toppings for about 10 minutes.

For the toppings:

  • Prep pizza toppings in desired quantity and shape. If using frozen vegetables, make sure to defrost them on the counter and wring out in a kitchen towel over the sink to remove all moisture (this prevent pizza crust from getting too heavy/soggy).
  • Combine minced garlic with the extra virgin olive oil and spread on the pre-baked crust.
  • Starting with the ricotta cheese, add desired pizza toppings. Finish with a generous sprinkle of Romano cheese.
  • Transfer pizza back to oven and continue baking for an additional 10-15 minutes.
  • Allow pizza to cool about 5 minutes before slicing.
